Red Cabbage and Spinach Salad

Ingredients
  

  • 1 ⁄2 cup orange juice
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp diced cilantro
  • 3 Tbsp raw sugar
  • 1 ⁄4 tsp salt
  • 1 ⁄6 teaspoon black pepper
  • 4 cups sliced red cabbage
  • 1 ⁄2 lb fresh Baby Spinach
  • 2 large green onions thinly sliced

Instructions
 

  • In a large bowl combine orange juice, vinegar, sugar, salt and pepper and whisk.
  • On a large serving platter, arrange thinly sliced red cabbage in the center of the platter. Arrange spinach around the cabbage.
  • Sprinkle sliced onion over the cabbage and spinach.
  • Drizzle about 1/3 of the dressing over salad.
  • Top with cilantro
  • Serve remaining dressing with the salad as desired.
