Red Cabbage and Spinach Salad
Ingredients
- 1 ⁄2 cup orange juice
- 3 Tbsp balsamic vinegar
- 1 Tbsp diced cilantro
- 3 Tbsp raw sugar
- 1 ⁄4 tsp salt
- 1 ⁄6 teaspoon black pepper
- 4 cups sliced red cabbage
- 1 ⁄2 lb fresh Baby Spinach
- 2 large green onions thinly sliced
Instructions
- In a large bowl combine orange juice, vinegar, sugar, salt and pepper and whisk.
- On a large serving platter, arrange thinly sliced red cabbage in the center of the platter. Arrange spinach around the cabbage.
- Sprinkle sliced onion over the cabbage and spinach.
- Drizzle about 1/3 of the dressing over salad.
- Top with cilantro
- Serve remaining dressing with the salad as desired.
