Sunflower Seed and Tofu Burger
Ingredients
- 1 ¼ lbs extra firm tofu drained, patted dry
- 3 medium eggs
- ½ cup fine dried bread crumbs gluten free optional
- ½ cup cashew nuts shelled toasted
- ½ cup sunflower seeds shelled toasted
- ½ cup button mushrooms sliced
- 1 ¼ Tbsp Dijon mustard
- 1 Tbsp soy sauce
- 1 tsp cumin ground
- ½ tsp cayenne ground
- ¼ tsp fine sea salt
- 1 ¼ Tbsp avocado oil
Instructions
- In a food processor, add all the ingredients.
- Pulse until mixture starts to combine.
- Scrape down side of food processor.
- Continue to pulse to get rid of bigger chunks.
- If the mixture is “thin” add more bread crumbs slowly.
- Divide mixture into 8 portions.
- Press and form into semi-flat patties with your hands.
- In a large skillet over medium high heat, add avocado oil.
- Add 4 patties to skillet, cover and cook. About 4-6 minutes.
- Flip, cover and continue to cook for 4-6 minutes. Should be dark brown.
- Check to make sure center is cooked through.
- Remove and cook the next 4 patties.
