Brussels Sprout Chips

  • 1 lbs. Brussels sprouts (trimmed, thinly sliced)
  • 2 Tbsp extra virgin olive oil
  • 4 Tbsp Parmesan (freshly grated, divided)
  • 3 tsp garlic powder
  • Kosher salt and freshly ground black pepper to taste.
  1. Preheat oven to 400 F.
  2. In a large bowl, add oil, garlic powder, salt, pepper and 3 Tbsp freshly grated parmesan.
  3. Whisk to combine.
  4. Set aside.
  5. Thinly slice Brussels sprouts and add to bowl.
  6. Toss to coat evenly.
  7. On a large baking sheet, spread Brussels sprouts in an even layer.
  8. Bake for 10 minutes.
  9. Toss and stir.
  10. Bake for 9-10 more minutes.
  11. Chips should be golden and crisp.
  12. Season with remaining Parmesan.
  13. Serve with favorite dipping sauce or eat by themselves.
