Dairy-Free Coconut Rice Pudding
Ingredients
- 13.5 oz.coconut milk unsweetened
- 1/2 cup sugar
- 2 cups water divided
- 1 tsp kosher salt
- 1/4 tsp ground fresh ginger
- 1 1/4 cups rice
- 3/4 cup shredded coconut
Instructions
- Make coconut rice. In a medium-sized sauce pot, combine coconut milk, sugar, one cup water, salt.
- Over high heat, bring the mixture to a boil.
- With your hands, rub the rice and ginger together to infuse flavors and then place into a small bowl.
- Once the liquid has come to a boil, add contents of your small bowl, turn heat to low and cover the pot. Let cook for 25 minutes.
- After the rice has cooked for 25 minutes, remove the lid and add one more cup of water. Turn heat up to high and whisk until mixture is bubbly.
- Remove from heat to cool.
- Place into a serving dish or individual bowls and refrigerate until firm.
