Dr. Nandi's Beet Pesto Pasta
Ingredients
This is a family favorite! We often add all sorts of lightly sautéed vegetables!
- 1/2 lb Regular or Quinoa Pasta
- 2 Cloves Garlic
- 1/2 Cup Raw Almonds
- 2 Large cooked and peeled purple beets coarsely chopped
- 1/3 Cup Olive Oil
- 1/3 Cup Parmesan Cheese
- 2 Tbsp Red Wine Vinegar
- 1/2 Cup Fresh Basil
- Salt & pepper to Taste
Instructions
- Blend until smooth!
