Cumin Beets to Boost Energy

Ingredients
  

  • 4 Tbsp avocado oil
  • 2 small sweet onions chopped
  • 4 cloves garlic finely minced
  • 3 tsp cumin seeds
  • 10 medium beets peeled, quartered
  • 4 tomatoes peeled, seeded, chopped
  • 3 cups water
  • 2 tsp salt
  • 4 Tbsp rice flour

Instructions
 

  • In a medium saucepan over medium high heat, add oil.
  • Add onion and garlic and saute until translucent. About 5-6 minutes.
  • Add cumin seeds and stir well.
  • Saute for 2 minutes.
  • Sprinkle in rice flour and stir well.
  • Saute for 1 more minute.
  • Add beets, tomatoes, water and salt.
  • Stir well.
  • Reduce heat to low.
  • Cover and simmer until beets become tender.
  • About 35-40 minutes.
