Watermelon Steak

Watermelon Steak

  • 1 medium watermelon (peeled, seeded)
  • 1 1/2 tsp coarse ground black pepper
  • 1 1/2 tsp sea salt
  • 3/4 Tbsp balsamic vinegar
  • 3 oz. pistachio nuts (shelled, crushed)
  1. Preheat oven to 400 F.
  2. Cut watermelon into 6 equal sized pieces. About ½-inch thick.
  3. Remove rind and seeds (if there are seeds).
  4. Use a baking sheet and line with aluminum foil.
  5. Lightly grease foil with avocado oil.
  6. Place watermelon pieces on baking sheet. Don’t allow them to touch.
  7. Season with salt, pepper and a touch of vinegar.
  8. Cover melon steaks with a sheet of foil.
  9. Cook for 28-30 minutes.
  10. Remove melon from oven and remove top foil sheet.
  11. Top steaks with pistachio.
  12. You may want to add a bit more seasoning depending on taste.
  13. Return to oven.
  14. Cook for 10-12 minutes.
  15. When serving, spoon juices over each steak.
  16. Eat warm.
