Tomato and Artichoke Heart Salad
- 3 cups cherry tomatoes (sliced in half)
- 15 oz artichoke heart (canned, drained, sliced into ΒΌ inch)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup extra virgin olive oil
- 1 1/2 Tbsp apple cider vinegar
- 1 tsp honey
- 1 tsp sea salt
- 1/2 tsp freshly-ground black pepper
- Mix olive oil, apple cider vinegar, sugar substitute, salt and black pepper together to make dressing. Wait until honey is dissolved.
- Combine artichoke hearts, red onions, parsley and tomatoes in a large bowl.
- Pour dressing over salad. Gently toss.
- Ready to Serve!
