Tomato and Artichoke Heart Salad

  • 3 cups cherry tomatoes (sliced in half)
  • 15 oz artichoke heart (canned, drained, sliced into ΒΌ inch)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup extra virgin olive oil
  • 1 1/2 Tbsp apple cider vinegar
  • 1 tsp honey
  • 1 tsp sea salt
  • 1/2 tsp freshly-ground black pepper
  1. Mix olive oil, apple cider vinegar, sugar substitute, salt and black pepper together to make dressing. Wait until honey is dissolved.
  2. Combine artichoke hearts, red onions, parsley and tomatoes in a large bowl.
  3. Pour dressing over salad. Gently toss.
  4. Ready to Serve!
