Simple Slow Cooker Leftover Turkey Chili

  • 2 lbs. leftover turkey breasts (boneless, skinless, shredded)
  • 2 onions (peeled, diced)
  • 4 stalks celery (diced)
  • 2-3 jalapeno peppers (minced (add more or less depending on heat preference))
  • 12 cloves garlic (peeled, finely minced)
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 1 tsp oregano
  • 1/2 tsp freshly ground black pepper
  • 1 Tbsp chili powder
  • 1 Tbsp salt
  • 4 cups low sodium chicken broth
  • 1 lb. frozen corn
  • 15 oz cannellini beans
  1. Except for the shredded turkey, beans, and corn, add in all other ingredients to the slow cooker.
  2. Cook for 4 hours on high or 6 hours on low.
  3. Roughly 60 minutes before serving, add the turkey, beans, and corn to slow cooker. Stir to combine.
  4. Cook to heat up beans, corn, and turkey.
  5. Serve warm.
