Red Cabbage and Spinach Salad

  • 1 ⁄2 cup orange juice
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp diced cilantro
  • 3 Tbsp raw sugar
  • 1 ⁄4 tsp salt
  • 1 ⁄6 teaspoon black pepper
  • 4 cups sliced red cabbage
  • 1 ⁄2 lb fresh Baby Spinach
  • 2 large green onions (thinly sliced)
  1. In a large bowl combine orange juice, vinegar, sugar, salt and pepper and whisk.
  2. On a large serving platter, arrange thinly sliced red cabbage in the center of the platter. Arrange spinach around the cabbage.
  3. Sprinkle sliced onion over the cabbage and spinach.
  4. Drizzle about 1/3 of the dressing over salad.
  5. Top with cilantro
  6. Serve remaining dressing with the salad as desired.
