Quinoa Three Bean Salad
- 1/2 cup uncooked quinoa
- 3/4 cup minced red onion
- 3 cloves garlic (minced)
- 1 large lemon (juiced)
- 2 Tbsp olive oil
- 3/4 tsp kosher salt
- 3/4 tsp coarse ground black pepper
- 15 oz chickpeas
- 15 oz can black beans
- 1 cup shelled edamame
- 1/2 cup corn
- 1/4 cup packed Italian parsley leaves (finely chopped)
- 3 scallions (finely chopped)
- Mix ingredients and enjoy!
