No Crust Pumpkin Pie
- 2 eggs
- 1/2 cup sugar
- 15 oz. pure pumpkin puree
- 1 tsp vanilla
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 1/2 cup unflavored almond milk
- Preheat oven to 350 F.
- In a mixing bowl, beat eggs and mix in remaining ingredients.
- Stir well to combine.
- Pour mixture into glass pie pan.
- Bake for 50-60 minutes.
- Middle should be set.
