Garlic Steamed Mussels

GARLIC STEAMED MUSSELS

Always use organic when possible

  • Large [pt
  • 3 lbs mussels, scrubbed, debearded
  • 3 tbsp alted butter (or your favorite vegan alternative)
  • 2 mall onions, peeled, chopped
  • 6 cloves garlic, peeled, finely minced
  • 24 oz diced tomatoes, canned
  • 1 cup white wine dry
  • 4 tbsp freshly chopped parsley, divided
  • Kosher salt and freshly ground pepper to taste
  1. In a large pot over medium-low heat, add butter and melt

  2. Add onions and allow to soften and become fragrant (about 4-5 minutes)

  3. Add garlic. Cook for 60-90 seconds

  4. Add tomatoes, wine, and parsley Stir to combine well Add salt and pepper to taste

  5. Add mussels and simmer until shells open (about 4-5 minutes)

  6. Garnish with 1 Tbsp of fresh parsley Serve with grilled bread

**Important Note: Always discard shells that do not open**
