Egg and Basil Red Sauce Finger Sandwich
- 4 slices bread
- 8 tsp mayonnaise (reduced-fat, divided or Greek yogurt)
- 4 tomatoes (thickly sliced)
- 1 whole big tomato chopped
- 4 tsp basil (fresh, sliced)
- 1/8 tsp salt
- 1/8 tsp pepper (black ground)
- 2 eggs
- Scramble egg to your desired level of fluffiness.
- In a pan put chopped tomatoes, put some tomato sauce and put basil.
- Spread each slice with 2 tsp mayonnaise/Greek yogurt.
- Top with scrambled egg, tomatoes, basil, salt, and pepper.
- Serve and Enjoy!
