Egg and Basil Red Sauce Finger Sandwich

  • 4 slices bread
  • 8 tsp mayonnaise (reduced-fat, divided or Greek yogurt)
  • 4 tomatoes (thickly sliced)
  • 1 whole big tomato chopped
  • 4 tsp basil (fresh, sliced)
  • 1/8 tsp salt
  • 1/8 tsp pepper (black ground)
  • 2 eggs
  1. Scramble egg to your desired level of fluffiness.
  2. In a pan put chopped tomatoes, put some tomato sauce and put basil.
  3. Spread each slice with 2 tsp mayonnaise/Greek yogurt.
  4. Top with scrambled egg, tomatoes, basil, salt, and pepper.
  5. Serve and Enjoy!
