Egg and Avocado Toast

  • 4 large Nest Fresh Eggs
  • 1 tsp olive oil
  • 1 peeled ripe avocado (mashed)
  • 4 1-oz slices hearty whole-grain bread, toasted
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • Cherry tomatoes
  1. Heat a large nonstick skillet over medium heat.
  2. Add oil to pan; swirl to coat.
  3. Crack Nest Fresh Eggs into pan; cook 2 minutes.
  4. Cover and cook 2 minutes or until desired degree of doneness.
  5. Spread one-fourth of mashed avocado evenly over each toast slice.
  6. Top each toast slice with 1 fried egg.
  7. Sprinkle eggs evenly with salt and black pepper.
  8. Serve with cherry tomatoes.
