Dr. Nandi’s Tomato Salsa
- 2 plum tomatoes seeded and diced
- 1 small yellow bell pepper (diced)
- 1 English cucumber diced
- 1/2 red onion diced
- 1 Tbsp red wine vinegar
- 1 Tbsp extra virgin olive oil
- kosher salt and freshly cracked black pepper
- In a medium bowl, combine the tomatoes, bell pepper, cucumber, onion, vinegar, oil, and 1/4 teaspoon each salt and pepper.
- Serve with your favorite dippers.
