Sweet Potato Burger

Sweet Potato Burger:

  • 2 cups sweet potato steamed cubes
  • 1 cup packed grated carrots
  • 1/3 cup pitted green olives
  • 2 Tbsp nutritional yeast
  • 3 Tbsp dry parsley
  • 1 cup chickpea flour
  • 2 Tbsp ground sesame seeds
  • 1 Tbsp apricot jam or your personal choice of jam
  • 3 tsp black pepper
  • 3 tsp smoked paprika

Sandwich Spread:

  • 2.8 oz. tofu
  • 1 Tbsp mustard powder
  • 1 Tbsp garlic flakes
  • A pinch of salt
  • 2 tsp onion powder
  • 2 tsp black pepper
  • 2 tsp chili flakes
  • 1 dropper orange stevia or orange juice to taste
  • 1 Tbsp lemon juice
  • 1 Tbsp apple cider vinegar
  • 1 tsp tahini
  • Tabasco sauce (a few splashes)

Sweet Potato Burger:

  1. Using a blender, add sweet potato, carrots, olives, yeast, paprika, parsley, black pepper and jam and blend until a smooth texture.
  2. Using a large mixing bowl, pour mixture in and slowly add the chickpea flour and sesame seeds.  
  3. Stir well and make sure it is evenly combined.
  4. Chill for 60 minutes.
  5. Preheat the oven to 355 F.
  6. Form chilled mixture into a large patty.
  7. Using a parchment lined baking tray, place patties on the tray.
  8. Bake for 15-20 minutes and then turn over.
  9. Bake for another 15 minutes.
  10. Check during this time to make sure they are not burning.

Sandwich Spread:

  1. In a food processor or a blender, add all ingredients and process or blend until desired smooth texture.
  2. Chill in fridge until needed.
