Soft Gingerbread Cookies

  • 1/2 cup butter
  • 1/4 cup coconut oil
  • 1/2 cup raw honey
  • 3/8 cup molasses
  • 1 egg
  • 1 tsp vanilla
  • 4 1/2 cups spelt flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  1. Cream butter, oil, honey & molasses in a mixer. Add egg and vanilla.
  2. Mix well.
  3. Combine flour, salt, baking soda, and spices in separate bowl.
  4. Add dry mixture to wet mixture slowly until well mixed. Drop by spoonfuls onto greased cookie sheet.
  5. Bake at 350 F for 10-12 minutes.
  6. Let cool for 5 minutes, then store in airtight container.
