Dr. Nandi’s No Cook Pumpkin Oatmeal

  • 1/4 cup of quick oats
  • 1/2 cup of unsweetened almond milk
  • 2 Tbsp of pumpkin butter (check out our recipe)
  • 1 tsp chia seeds
  • pinch of cinnamon
  • pinch of pumpkin pie spice
  • 1/4 sliced banana
  • Topping
  • 1/4 cup of unsweetened almond milk
  • pinch of cinnamon
  • pinch of pumpkin pie spice
  • 1 Tbsp raw hulled pepitas
  1. Mix the oats and 1/2 cup of the milk in a jar.
  2. Stir in the pumpkin butter, chia seeds and spices.
  3. Add banana, cover jar, shake and refrigerate overnight.
  4. The next day remove from the refrigerator and let it sit on the counter 30 minutes to warm up.
  5. Stir in the remaining milk, sprinkle with a little cinnamon and pumpkin spice and top with pepitas.
