Dairy-Free Coconut Rice Pudding

  • 13.5 oz.coconut milk (unsweetened)
  • 1/2 cup sugar
  • 2 cups water (divided)
  • 1 tsp kosher salt
  • 1/4 tsp ground fresh ginger
  • 1 1/4 cups rice
  • 3/4 cup shredded coconut
  1. Make coconut rice. In a medium-sized sauce pot, combine coconut milk, sugar, one cup water, salt.
  2. Over high heat, bring the mixture to a boil.
  3. With your hands, rub the rice and ginger together to infuse flavors and then place into a small bowl.
  4. Once the liquid has come to a boil, add contents of your small bowl, turn heat to low and cover the pot. Let cook for 25 minutes.
  5. After the rice has cooked for 25 minutes, remove the lid and add one more cup of water. Turn heat up to high and whisk until mixture is bubbly.
  6. Remove from heat to cool.
  7. Place into a serving dish or individual bowls and refrigerate until firm.
