Easy Creamy Avocado Soup

Dr. Nandi’s Creamy Avocado Soup

  • 1/2 seedless cucumber
  • 1 medium avocado
  • 1 shallot
  • 2 Tbsp plain yogurt
  • 2 Tbsp fresh mint
  • 1 sprig fresh mint
  • 4 tsp fresh lime juice
  • 1 1/2 tsp sea salt
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp fresh ground cumin
  1. Place the cucumber, avocado, shallot, yogurt, 2 Tbsp mint, lime juice, salt, pepper, cumin, and 1 cup cold water in a blender, and process until smooth.
  2. Chill for at least 1 hour.
  3. Serve garnished with a slice or two of avocado and remaining mint leaves.
