Cranberry Granita

  • 2 cups cranberry juice
  • 1/3 cup lemon juice
  • 1/4 cup corn syrup/honey
  • 1/4 tsp kosher salt
  • 3/4 cup tonic water
  • 4 mint leaves (plus a few more for garnish)
  1. In a bowl, whisk together both juices with honey and salt. Add in tonic water. Taste and adjust sweetness to your liking.
  2. Pour the liquid into a 10 x 10 casserole dish and place it into the freezer.
  3. Place in freezer for an hour.
  4. Remove from the freezer and stir liquid with a fork. Place it back into the freezer for another hour.
  5. Remove and stir again, breaking up and big frozen chunks with a fork.
  6. Place back into the freezer for another half hour. Serve in a chilled glass with a sprig of mint on top.
