Dr. Nandi’s Corn and Avocado Salsa
- 1 medium avocado (diced)
- 3/4 cup of frozen corn
- 1/2 cup quartered grape tomatoes
- 1 Tbsp chopped fresh cilantro
- 2 tsp lime juice
- 1/4 tsp of kosher salt
- Defrost frozen corn
- Toss avocado, corn, tomatoes, cilantro, lime juice and salt in a medium bowl.
- Stir to cover all ingredients
- It is that simple!
