Cinnamon Surprise Breakfast Muffins

  • 2 cups and 2 Tbsp oat flour
  • 1 Tbsp baking powder
  • 1/2 tsp pink salt
  • 2 tsp cinnamon
  • 1/4 tsp vanilla bean powder
  • 1/2 cup chopped apples
  • 1/2 cup melted butter
  • 1/2 tsp apple cider vinegar
  • 1 shot freshly brewed espresso
  • 1 cup coconut sugar
  • 1 tsp sugar
  1. Preheat oven to 400 F.
  2. Grease a muffin tin with butter.
  3. Add flour, baking powder, salt and cinnamon to a large mixing bowl and stir well.
  4. In a blender, add the oat flour, apple cider vinegar, espresso, melted vegan butter and sugar.
  5. Blend until smooth.
  6. Pour wet mixture into the mixing bowl and stir until batter forms.
  7. Spoon batter into muffin tins and top each muffin with the cinnamon-sugar sprinkle – generous amounts.
  8. Bake at 400 F for 12 minutes, then reduce heat to 350 and bake another 8 minutes.
  9. Serve warm.
