Cumin Beets to Boost Energy
Cumin Beets
- 4 Tbsp avocado oil
- 2 small sweet onions (chopped)
- 4 cloves garlic (finely minced)
- 3 tsp cumin seeds
- 10 medium beets (peeled, quartered)
- 4 tomatoes (peeled, seeded, chopped)
- 3 cups water
- 2 tsp salt
- 4 Tbsp rice flour
- In a medium saucepan over medium high heat, add oil.
- Add onion and garlic and saute until translucent. About 5-6 minutes.
- Add cumin seeds and stir well.
- Saute for 2 minutes.
- Sprinkle in rice flour and stir well.
- Saute for 1 more minute.
- Add beets, tomatoes, water and salt.
- Stir well.
- Reduce heat to low.
- Cover and simmer until beets become tender.
- About 35-40 minutes.
