Broccoli and Sunflower Seed Salad

  • THE Salad
  • 1 ½ lbs. broccoli florets (thinly sliced, roughly chopped)
  • ¾ cups raw sunflower seeds (shelled)
  • ¾ cups red onion (peeled, finely chopped)
  • ¾ cups sharp cheddar cheese (grated (non-dairy optional))
  • 2/3 cups dried tart cherries
  1. In a pan over medium heat add raw sunflower seeds.
  2. Stir frequently and cook for 4-5 minutes. Should start to turn golden.
  3. Set aside.
  4. In a large bowl, add chopped broccoli, onion cheese and cherries.
  5. Stir to combine and set aside.
  6. In a small bowl, add all dressing ingredients and whisk until well blended.
  7. Pour dressing over salad and stir to combine. Make sure that all ingredients are coated.
  8. Serve and enjoy!
