Broccoli and Sunflower Seed Salad
- THE Salad
- 1 ½ lbs. broccoli florets (thinly sliced, roughly chopped)
- ¾ cups raw sunflower seeds (shelled)
- ¾ cups red onion (peeled, finely chopped)
- ¾ cups sharp cheddar cheese (grated (non-dairy optional))
- 2/3 cups dried tart cherries
- In a pan over medium heat add raw sunflower seeds.
- Stir frequently and cook for 4-5 minutes. Should start to turn golden.
- Set aside.
- In a large bowl, add chopped broccoli, onion cheese and cherries.
- Stir to combine and set aside.
- In a small bowl, add all dressing ingredients and whisk until well blended.
- Pour dressing over salad and stir to combine. Make sure that all ingredients are coated.
- Serve and enjoy!
