Brain-Boosting Fish Fillets

  • 4 5- oz. haddock fillets
  • 6 garlic cloves (peeled, crushed)
  • 2 Tbsp avocado oil
  • 2 pints cherry tomatoes (halved)
  • 2 Tbsp white wine (not sweet)
  • 1/2 cup kalamata olives (pitted)
  • 1 cup fresh basil (finely chopped)
  • Favorite seasoning blend
  1. Preheat oven to 425 F.
  2. In an oven safe skillet over medium heat, add avocado oil.
  3. Add garlic and allow to become fragrant. Stir often.
  4. About 1-2 minutes.
  5. Add tomatoes to skillet and stir.
  6. Add white wine and stir well.
  7. Remove from heat.
  8. Season fillets with favorite seasoning blend.
  9. Add fillets to the pan. Make sure they touch the bottom.
  10. Top fillets with olives and basil.
  11. Spoon some tomatoes and pan juice over fillets.
  12. Place in oven and cook for 10 – 15 minutes.
  13. Remove and enjoy.
