Brain-Boosting Fish Fillets
- 4 5- oz. haddock fillets
- 6 garlic cloves (peeled, crushed)
- 2 Tbsp avocado oil
- 2 pints cherry tomatoes (halved)
- 2 Tbsp white wine (not sweet)
- 1/2 cup kalamata olives (pitted)
- 1 cup fresh basil (finely chopped)
- Favorite seasoning blend
- Preheat oven to 425 F.
- In an oven safe skillet over medium heat, add avocado oil.
- Add garlic and allow to become fragrant. Stir often.
- About 1-2 minutes.
- Add tomatoes to skillet and stir.
- Add white wine and stir well.
- Remove from heat.
- Season fillets with favorite seasoning blend.
- Add fillets to the pan. Make sure they touch the bottom.
- Top fillets with olives and basil.
- Spoon some tomatoes and pan juice over fillets.
- Place in oven and cook for 10 – 15 minutes.
- Remove and enjoy.
